- Half Cup Of Soy Milk / Milk
- One And A Half Tablespoon Of White Vinegar
- Half Teaspoon Of Baking Soda
- Half Teaspoon Of Baking Powder
- Around One Cup Full Of Powdered Sugar
- 2/3 Cup Butter (Melted)
Now that you have everything you need to bake the cake, let’s get to the process!
- Make sure that you have everything around the reach and have everything arranged in right manner. If you have not chopped the dry fruits prior to the preparation, then this might be the best time to do so!
- Mix Maida, Atta, Cinnamon powder, and Grated Nutmeg along with Baking Powder together so that they all mix up well together. After you have mixed them completely, add Melted Butter and mix it again till it looks like a paste or ‘Halwa’. Add sugar to the mix along with the grated dry fruits and mix them all well together.
- Now, add vinegar to the milk and gently mix them together. Don’t stir the mixture continuously or you will end up making the mixture curdled. Add baking soda to it and stir the mix gently till it froths up.
- Add this mixture to the batter (The ‘Halwa’ you just mixed) along with vanilla essence.
- Pour the batter in a pan that you will be using for the oven. Make sure that you have covered the sides of pan in butter, as it will prevent the cake from sticking to the sides once it is baked fully.
- Pre heat the oven before at about 180 degrees and then bake the cake in it for 35-40 minutes.
- Voila! Your delicious eggless Christmas cake is ready! The cake will have a lovely roasted brown color to the top with a certain glaze to it, indicating that you have baked it perfectly!
- Slice the cake and enjoy it with your family members! The cake can be used for a week and make sure you are keeping it refrigerated in an airtight container. Just warm the cake in a microwave before serving it!
