With the lockdown imposed for over two months now, everyone is trying to stay afloat, the most obvious question for bachelors who couldn’t make it home being, ‘what to eat for breakfast’? While all of us miss our morning poha at Ravi’s or Chappan dukaan, we cannot help but cook breakfast for ourselves to start the day on a happy note!
With this pandemic, the world has been stressing on making healthier choices, eating local, seasonal fruit and veggies, and making the most of what we already have at home. We are not talking about for-the-gram fancy Avocado toast breakfasts, just some super healthy, energy-foods that are available locally, and are super comfortable on your pockets too!
Here are simple 10 recipes for you to try at home, these are not only tummy-filling but also soul-satisfying!
Rawa Upma
One of the healthiest breakfast from South India is not only super yummy but is also full of goodness. Rawa is easy on the stomach, the veggies that you add to the dish will make for a great morning fuel that is full of nutrients. The best part about this dish is, it uses very little oil while cooking. We suggest you use kadi-patta to enhance the flavour and nutrient value of this dish. Recipe
Masala cheese toast
The easiest way to satiate your taste buds and have a delicious breakfast is by making a masala cheese toast. Most of us love a certain flavour to our dishes instead of them being bland. Go for a quick masala cheese toast instead of add a slice of cheese in between two pieces of bread and eating them right out of the fried. Guilty? Recipe
Utthapam
Stock on some ready-made dosa batter if you feel grinding chawal-dal in the morning is a task, which sure is! Now, making perfect dosas requires more patience and practice, so the easier way out is making a round utthapam, loaded with veggies for a happy tummy! Not only is an Utthapam healthy, it doesn’t need to be had with chutney or sambhar. You can have some ketchup and it will taste equally good. Recipe
Bombay toastie
We cannot have the Mumbai street food or go to our favourite chappan dukaan, but what we CAN have is a Bombay toasty that will make your taste buds very happy. Super easy to make and super delicious, just grind some coriander chutney a day before and stock it in the fridge. All you’d need in the morning is layers of onion, tomatoes, mashed potatoes, and some of this chutney to be put on perfectly toasted bread slices. Easy peasy, right? Recipe
Banana and almond porridge (daliya)
Another simple way to add nutritional value to your morning breakfast is by having daliya or porridge. While you can also steam it and sautee it with your favourite veggies, having it with milk is equally delicious and soul satisfying. Just add some oats, chia seeds (optional), bananas, milk, any dry fruit you have at home and replace the sugar with honey! Recipe
Sauteed veggies with buttermilk on the side
Best way to get your veggies? Sautee them up in just a drizzle of oil (prefer oils that are not refined or olive oil for maximum benefits) and add pepper, garnish with your favourite seasoning, exclude the salt if you can, and voila! Happy, healthy bowl of veggies to go along with your tall glass of chaanch! Recipe
Besan ka cheela
Besan ka cheela has to be by far, the easiest thing one can ever make! No special cooking skills needed. Just whip some besan with water and add finely chopped veggies, some salt, pepper, and garam-masala, and there you go! Ready within minutes and super yummy too. You can also have nimbu ka achaar with your cheelas for a dose of vitamin C, and that tangy taste! Recipe
Vermicelli Upma
Light and healthy, another easy breakfast takes a little longer to cook but fills you right up is Vermicelli upma. Simple kitchen ingredients and fresh veggies make this a delicious option for when you are looking for a large, filling breakfast. This can be had with sambhar too, or curd, either way it tastes delicious! Recipe
Bread poha
As much as the humble poha makes for a great, quick breakfast, bread poha is a great option for days you want to switch up your breakfast a little. Instead of the soaked poha, use bread slices cute in small square pieces and toss them in some tadka and veggies. YUMMY! You can also add grated coconut on top of your bread poha to add the goodness of coconut in your morning meal! Recipe

Add sporuts to your breakfast by sauteeing them with beans and veggies. Super simple, and incredibly nutritious. Who said, sprouts need to be tasteless? Have this with your morning cuppa for a soul-satisfying breakfast. Recipe
