This Maharashtrian delicious food is served at almost all the big hotels and roadside dining bases. It is a thick curry made with seasonal vegetables, potatoes, tomatoes and onions, served with pav. The word ‘Pav’ comes from the Portuguese word for bread and ‘Bhaji’ in Marathi means vegetable.
Pav Bhaji is said to have started as a midnight meal for textile workers in the state of Maharashtra in the 1850s. According to the story, the mill workers would get angry when they returned home from work late at night and asked for dinner. Thus, in order to make an edible meal, they started collecting the leftover bread, mixing all the vegetables and mashing them. It was an unrefined version of today’s delectable Pav Bhaji, which is enjoyed and eaten today.
Pavabhaji was discovered when the Civil War (1861–1865) in America led to rapid demand for cotton. Therefore, cotton cloth production started happening day and night in the textile mills of Mumbai. Due to the production of clothes on a large scale, the workers had to work day and night in the mills. They had very little time to eat. Street food vendors standing outside the mills also started losing money.
Realizing the fragility of the time, a new dish was discovered. They made many vegetables by mashing them in tomato, potato base and served with pav. It was very tasty and filling, the workers used eat it and immediately return to work.
The best part was, the dish didn’t make them drowsy. People liked the taste of this tasty and spicy dish. In this way, pav bhaji gradually became famous in Maharashtra and later the entire country. Now it is being served from small and big restaurants in the country to five-star hotels as well.
